A small village located in a mountainous region with a diversity of flora and fauna, Chaguite Grande is one of the highest coffee regions in Matagalpa. Altitudes in Chagüite Grande are in a range from 1100 – 1400 meters above sea level and temperatures range from 59F – 90F (15C – 32C), which combined provide a good mix for post-harvesting processes such as prolonged fermentations and microbial activity throughout the day. Agriculture is historically one of the most important economic activities in the region; this lot is composed of collections from 46 smallholders farming an average of 1 hectare. They take great care during the process of harvesting, wet milling, and transportating their coffees to Covoya´s dry mill.
